Our salt water taffy is made every day with the exception of Sundays. We cook each batch according to the temperature of the day. If it’s very cold outside, the candy is cooked at a lower temperature, which produces a softer candy. The opposite holds true when the temperature is above 70 degrees Fahrenheit. We cook the taffy to a higher degree, producing a slightly firmer piece of candy. This ensures that it doesn’t turn into a soupy mess if it’s kept warmer than 70 degrees. If our taffy feels hard, it is most likely because it is cold; try holding the taffy snugly in the palm of your hand for a few moments, the warmth should soften it right up! The way to test to see if any taffy is fresh is to do the “pull test.” If you can pull a piece of taffy and it produces “ribbons” or “strings,” it’s fresh. If the taffy snaps or breaks apart without a pull (much like the consistency of over-chewed gum) throw it out; it’s old!
